Maple Syrup, Walnut and Buttermilk Wholemeal Scones

Ingredients

  • 300g self-raising flour
  • 100g oatmeal (porridge)
  • 100g wholemeal flour
  • 50g caster sugar
  • 1 dessertspoon of baking g powder
  • 1/2 tea spoon salt
  • 160g unsalted butter (warmed)
  • 100g broken walnuts
  • 125ml buttermilk
  • 150ml maple syrup

Cooking Method

  1. Blend together the self raising flour, the oatmeal, the wholemeal flour, caster sugar
  2. Baking powder and the salt.
  3. Rub through the butter until it goes into crumbs.
  4. Fold in the walnuts.
  5. Mix in the buttermilk with the maple syrup, then stir in this mixture to the dry goods to make a dough.
  6. Press out onto a table about 3 cm thick, using a pastry cutter stamp out your scones. This mix will make a dozen good sized ones.
  7. Place onto a greased baking tray.
  8. Bake in a hot oven, around 200°C, for around 10 minutes.
  9. These scones will rise like a space shuttle, and are wonderful dripping with butter and lemon curd whilst still warm.

  • I cut the amount of salt by at least half, used pecans instead of walnuts, and gritted my teeth when it came to measuring out the liberal amount of very expensive maple syrup. And I got 17 good-sized scones out of this recipe. But the difference was amazing - the best scones ever, worth blowing the grocery budget on!

  • my god i think i have gone to heaven these scone both my daughter and i found gourgous we had them for brekkie and packed in our lunch box i might not but as much sugar in next time as found quite sweet...
