Tomato and Basil Soup
A simple and flavourful Tomato and Basil Soup that can be frozen.

- 1 tsp olive oil
- 5g butter
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 2 x 400g tins chopped tomatoes or rough passata
- A bunch of basil, roughly chopped a few leaves reserved for garnish
- Knorr tomato and garlic seasoning blend
- 400ml stock made from Knorr sundried tomato and paprika stockpot
- 100ml single cream
Heat the olive oil and butter in a saucepan. Add the onion along with a pinch of salt. Saute on a gentle heat until the onion is soft and translucent, then add the garlic. Cook for a further minute or two then pour in the tomatoes, basil and stock or water. Season with salt and pepper.
Bring to the boil then cover and turn down the heat. Simmer for 15 minutes. Blitz either by transferring to a blender or using a stick blender in the pan. Stir through the single cream and serve with a sprinkling of shredded basil.
