Prawn and Chorizo bites with garlic oil

Ingredients
Garlic Oil
- 8 garlic cloves crushed
- 1 tsp of salt
- 1 tbsp of black pepper
- 50cl of good quality olive oil
Prawn and Chorizo bites
- 500g tiger prawns
- 1 cooking chorizo sausage (as spicy as you may like)
- 1 bunch of flat-leaf parsley
- 1 lime
- garlic oil
Method
For the Garlic oil
Add all the ingredients to a small pan and gently heat the olive oil.
Allow the infusion to cool and add to a screw-top or kilner jar.
Shake well and store for the summer.
For the Prawn and Chorizo bites
Slice the chorizo to the same thickness as the prawn. Then fit a slice of chorizo in each prawn.
Set the prawns on a grill and brush them with the garlic oil.
BBQ for 3 minutes each side and brush even more with plenty of garlic oil while cooking.
Collect all the prawns and chorizo in a bowl, add the zest of a lime, the juice of half a lime, a chopped bunch of parsley and some more of our garlic oil.
Mix gently and enjoy!
