Prawn and Chorizo bites with garlic oil

So good for the Summer and simple as well...

Prawn and Chorizo bites


Serves 2 to 3 people

Garlic Oil

  • 8 garlic cloves crushed
  • 1 tsp of salt
  • 1 tbsp of black pepper
  • 50cl of good quality olive oil

Prawn and Chorizo bites

  • 500g tiger prawns
  • 1 cooking chorizo sausage (as spicy as you may like)
  • 1 bunch of flat-leaf parsley
  • 1 lime
  • garlic oil


  1. For the Garlic oil 

    Add all the ingredients to a small pan and gently heat the olive oil.

  2. Allow the infusion to cool and add to a screw-top or kilner jar.

  3. Shake well and store for the summer.

  4. For the Prawn and Chorizo bites

    Slice the chorizo to the same thickness as the prawn. Then fit a slice of chorizo in each prawn.

  5. Set the prawns on a grill and brush them with the garlic oil.

  6. BBQ for 3 minutes each side and brush even more with plenty of garlic oil while cooking.

  7. Collect all the prawns and chorizo in a bowl, add the zest of a lime, the juice of half a lime, a chopped bunch of parsley and some more of our garlic oil.

  8. Mix gently and enjoy!
