Onion and Radish Salad
The secret of the salad is to blanch the onion rings before adding them to the salad to take away any bitterness. Perfect served with argentinian-style steak, as pictured.

- 2 large onions, sliced into rings
- 5 tbsp olive oil
- 2 tbsp red wine vinegar
- 2 garlic cloves, crushed
- 1/2 tsp chilli powder
- 6 large radishes, sliced
- large handful fresh parsley, chopped
- large handful fresh coriander, chopped
- 1 tsp sugar
- salt and freshly ground black pepper, to taste
Separate the onion slices into rings and place in a bowl. Cover with boiling water and leave for 15 minutes.
Meanwhile, place the remaining ingredients into a salad bowl and mix well.
Drain the onion rings and plunge into cold water. Shake dry and add to the salad bowl.
Leave for a couple of hours for the flavours to infuse.
