One Pot Vegetable Rice

An exclusive recipe from Si King and made using a Knorr Vegetable Stock Pot ®

One Pot Vegetable Rice

  • 2 dessertspoons oil
  • 350gms washed long grained rice
  • 2 medium onions, finely sliced
  • 2 sticks celery, finely sliced
  • 2 medium carrots, finely sliced
  • 2 cloves garlic, chopped
  • 150gms cabbage, sliced
  • 100gms broccolini florets
  • 100gms frozen peas
  • 400ml water
  • 1 Knorr Vegetable Stock Pot ®


  1. To a heavy-bottomed pan with a tight-fitting lid, add the oil.

  2. Add the sliced onions, celery, and the carrots – Mix

  3. Cover with a tight-fitting lid

  4. Sauté the onions, celery, and carrots for a couple of minutes.

  5. Add the chopped garlic – Mix

  6. Cover and cook for a further 2 mins.

  7. Remove the lid – Stir

  8. Add the cabbage – Stir

  9. Cover and cook for a further minute.

  10. Add the Knorr Vegetable Stock Pot

  11. Add the washed rice – Stir

  12. Add the water (400ml)

  13. Cover and cook for a minute.

  14. Add the frozen peas – Mix

  15. Cover the pan and bring to a boil for 10 minutes.

  16. Remove the pan from the heat, leaving the lid in place.

  17. Allow the rice and vegetables to steam for a further 20mins.

  18. Important Note: Do not remove the lid while the rice is steaming.
