One Pot Vegetable Rice
An exclusive recipe from Si King and made using a Knorr Vegetable Stock Pot ®

- 2 dessertspoons oil
- 350gms washed long grained rice
- 2 medium onions, finely sliced
- 2 sticks celery, finely sliced
- 2 medium carrots, finely sliced
- 2 cloves garlic, chopped
- 150gms cabbage, sliced
- 100gms broccolini florets
- 100gms frozen peas
- 400ml water
- 1 Knorr Vegetable Stock Pot ®
To a heavy-bottomed pan with a tight-fitting lid, add the oil.
Add the sliced onions, celery, and the carrots – Mix
Cover with a tight-fitting lid
Sauté the onions, celery, and carrots for a couple of minutes.
Add the chopped garlic – Mix
Cover and cook for a further 2 mins.
Remove the lid – Stir
Add the cabbage – Stir
Cover and cook for a further minute.
Add the Knorr Vegetable Stock Pot
Add the washed rice – Stir
Add the water (400ml)
Cover and cook for a minute.
Add the frozen peas – Mix
Cover the pan and bring to a boil for 10 minutes.
Remove the pan from the heat, leaving the lid in place.
Allow the rice and vegetables to steam for a further 20mins.
Important Note: Do not remove the lid while the rice is steaming.
