Hasselback Potatoes

These are great – a bit fancy and long forgotten. If you like crispy potatoes with a bit of style, then these are the ones for you.

  • 6 good medium-sized potatoes
  • 100g butter, melted
  • fine sea salt and ground white pepper


  1. Put a potato into a tablespoon and cut lots of slices down through the potato – the edges of the spoon stop you cutting all the way through. Cut all the potatoes in the same way and put them in water until you are ready to cook them. This preparation can be done ahead of time.

  2. Preheat the oven to 180°C/Gas 4. Dry the potatoes, season and paint them with melted butter. Bake the potatoes in the preheated oven for about 45 minutes or so until crispy. Baste with more melted butter about half way through.
