Ingredients

  • 1 small courgette
  • 1 medium onion
  • 400g lean beef steak mince
  • 2 garlic cloves, peeled and crushed
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tbsp sun-dried tomato paste or tomato purée
  • 1 tsp sunflower oil
  • 4 ciabatta rolls
  • 100g reduced-fat (light) mozzarella, well drained and cut into 4 slices
  • 2 large ripe vine tomatoes, sliced fresh basil leaves
  • balsamic vinegar, for drizzling
  • fine sea salt
  • freshly ground black pepper

Cooking Method

  1. Trim the courgette and grate it coarsely on to a board, then tip it into a large mixing bowl. Peel the onion and grate it coarsely, then add this to the bowl with the courgette. Put the minced beef, garlic, oregano, basil and tomato paste or purée into the same bowl and season well with salt and pepper. Mix with clean hands until everything is thoroughly combined.
  2. Divide the mince mixture into 4 evenly sized balls and flatten each into a patty shape about 2cm thick. Brush the oil over a large nonstick frying pan and place over a low heat. Fry the burgers gently for about 10 minutes or until nicely browned and cooked through, turning them halfway through the cooking time. Preheat the grill to its hottest setting.
  3. While the burgers are cooking, cut the ciabatta rolls in half horizontally and place them on a grill pan, cut side up. Cook under the preheated grill until lightly toasted. Remove from the heat and take the bread off the tray and put it to one side.
  4. Place the hot burgers on the tray and top each one with a slice of mozzarella. Put the tray back under the grill for another 1–2 minutes or until the mozzarella has melted.
  5. Put the bottom half of each roll on a plate and top with sliced tomatoes and basil leaves. Add a dribble of balsamic vinegar and some black pepper. Add a sizzling hot burger, top with the remaining bread and serve right away. Fantastic!

  • Absolutely delicious. I added grated carrots into the burger - not sure you'd have noticed, but it was really great. I also grilled on my George Foreman machine and put in a wrap rather than a bun so felt even healthier (who knows if it was or not). Great recipe though, so looking forward to trying more soon.

    • What a good idea, did you shape the burgers to fit the wrap? Guess what I am having for lunch tomorrow....

  • just made the burgers tonight very very scrummy - the hubby had full burgers i had mine topless i thought half a bun was just enough - i did not have problems with the burgers falling apart - but if you keep turning them over to cook i can see they may start to fall apart - just leave to cook 5 minutes and each side - a brilliant recipe, tasty, and quick to make

  • Made these and they are really scummy and full of taste. Did not fall apart but they had been in the fridge for an hr or so. These are def going to be a summer staple for the BBQ!

    Recommend really mashing the mixture together when making the burgers, as this stops them breaking apart when attempting to turn over!

  • Made these the other night - fantastic. There are only two of us, and the mince we get is sold in half kilos so we had bigger burgers (it's that or make 5). In the end we opened out the bun and had an oval shaped burger. With another 2 spare guess what we are having tonight!

  • I made these tonight and as I'm not the main cook in the household *ahem* I wasn't sure how they would turn out. I needn't have worried as (as I am reliably informed) they were delicious. No problem with them falling apart, maybe that was because I really squidged the mixture together well. Next time I cook them I intend to add just a splash of Soy sauce and see how that goes.

  • Made these and used my mini chopper instead of grating the courgettes and onions. Saves crying with the onions and alot quicker. Very tasty. Made with 500g of mince so made 5 burgers using a burger maker from Lakeland giving a more uniformed shape. Ate two froze the rest.

  • Tried out these burgers instead of a takeaway delicious clean tasting and no horrible burger after smell. Would recommend to anyone we are not on a diet but like to eat healthy food and this burger is a winner .

  • Why couldn't you use egg white in the mixture its fat free and would hold it together .

  • Student cooking for one... made these burgers as i am giving the HB book ago (after Christmas has treated me really well) i had 300g of mince so just 3/4 the recipe making 3 burgers (to be used in the week). Really easy to make and quick, which when only cooking for one is good, as i only really enjoy spending a good while in the kitchen when catering for friends/family. i imagine you could freeze them raw (a plus). Tasty, liked balsamic touch... would be nicer with a with a more flavorsome cheese (no way near as healthy though...unfortunately) but yum! filling too!

    • Look at the calorie content of the lower fat cheeses and you will find you can use less of a mature and more flavoursome cheese for a tastier topping without increasing the overall calorie count. Try extra mature West Country Cheddar.
